Saturday Bottomlining and Flower City Pickers Checklist
General Info
Remember to delegate as many of these tasks as possible!
We want to be serving on time. Consistency is important! Saturday serves are at 6:30pm. Wednesday serves are at 7:00pm.
Flower City Pickers is only on Saturday.
At least 5 or 6 people will be needed to cook and serve.
Sat. 10:00am? (Not Wed.)
- (FCP) Call Flower City Pickers at (585) 205-8187 and ask them to set aside food for FnB
- If they don’t answer, show up in person at 1:30pm when they start and ask
Sat. 2:30pm (Not Wed.)
- (FCP) Pick up food (TODO at farmers market?)
Sat. 3:30pm, Wed. 4:00pm
- Unlock Squirrel doors
- The side door's crash bar will need to be locked open with a screwdriver or similar inserted into the hole in the top-center
- Turn on lights
- Main area
- Kitchen
- Basement
- Check mouse traps, especially in kitchen
- Put away dry dishes in kitchen
- Set up folding tables
- Sanitize tables
- Make sure there are paper towels in the kitchen and bathrooms
- Set up sink according to the "Wash, Rinse, Sanitize" system
- The left-most sink is for washing. Clean it with soap and water.
- The center sink is for rinsing. Clean and sanitize it.
- The right-most sink is for sanitizing. Clean it, fill it 1/3 full with hot water, and put in 3 or 4 bleach tablets.
- Take inventory of ingredients
- Kitchen pantry
- Refrigerator(s) and freezer(s)
- Basement
- Throw out expiring ingredients
- Turn on range hood fan by plugging it into the outlet
- If necessary, open kitchen window near flat top
- Turn on gas appliances
- Turn on gas lines (parallel=on, perpendicular=off)
- Light pilots quickly
- Welcome and inform people
- Provide tours of the space
Sat. 4:00pm, Wed. 4:30pm
- Help bring in FCP donations
- Decide what to cook
- Prioritize sub-tasks (chopping, coffee, etc)
- Start cooking
When work slows down, Sat. around 5:00pm, Wed. around 5:45pm
- Circle up
- Describe what we do
- Names and pronouns
- Announcements on the board
- Ask if anyone has additional announcements

- Go to the serve

- When assembing caraffes, test that they work. Not all parts are interoperable.
- Sanitize tables and put serve food in containers

- Cleanup
- Turn off gas appliance lines
- Clean flat top
- Clean while still warm, but not hot
- Refer to instruction sheet on window
- Wash dishes
- Wipe down, sanitize tables & sink
- Ensure lighter is on the cart between the ovens
- Sweep all floors
- Sweep kitchen twice
- Mop kitchen
- Do not mop common area, only sweep or vacuum
- Clean bathrooms

Misc Info
- Coffee takes about 15 minutes to brew and 1 caraffe will hold almost 2 pots
- Usually 3 or 4 caraffes (6 to 8 pots) will be used at a serve
- Start washing dishes as early as possible since this can easily be the most time consuming task
